Since 2016, I have been leveraging my expertise as a pastry consulting chef to serve creation and professional training. From start-ups to food companies, I support them in the sector of food innovation and the creation of "wellness" products.

Through demonstrations and professional training, I travel internationally to train and promote wellness and committed pastry within international culinary schools.

Responsible for creation at the chocolate shop Les Marquis de Ladurée, I oversee the entire collection.

Petits gâteaux, chocolate candies, artistic pieces to celebrate Christmas or Easter...

All of these creations are then sold in the boutique and during Pop-up stores.

ALAIN DUCASSE TRAINING CHEF

Johanna le Pape ducasse educationJohanna Le Pape teaches culinary arts education with passion. Always driven by the desire to share her love for cooking, she now holds the position of head trainer at the Alain Ducasse Culinary School.

There, she teaches classes in both French and English for enthusiasts and aspiring professionals alike.

Pedagogical principles are at the core of her teaching philosophy, as much as the mastery of pastry techniques.

2014

WORLD CHAMPION IN PASTRY ARTS 2014

Johanna le Pape championne du monde de dessertJohanna Le Pape became the world champion of desserts in 2014, alongside her partner Gaetan Fiard.

Under the theme of Notre Dame de Paris, their buffet showcased a collection of three artistic pieces along with culinary creations such as a plated dessert, a cake, a tart, and three chocolate bonbons.

This success marked a pivotal moment in her early career.

I then joined the prestigious Meurice Palace, as part of Cédric Grolet and Maxime Frédéric's team. Perfectionism and rigor were our guiding principles, aiming to deliver exceptional pastry.

This experience allowed me to elevate my standards and confirmed my passion for haute-couture pastry.

My journey into the realms of gastronomy and luxury began at the beautiful 5-star hotel on the Left Bank of Paris.

Starting as a pastry commis, I progressed to become a demi-chef de partie, overseeing the brasserie and the Paris 1-star restaurant.
